Bistro TWO opened on the waterfront of the Roer in September 2020. A classic bistro in a modern way: enjoy comfort food, select from a well-paired wine list and feel at home. Not pretentious or stiff; come and relax, laugh and unwind. The most important thing to do at Bistro TWO is enjoy: a delicious menu, the beautiful surroundings and each other.
Our menu is full of fantastic, recognizable dishes that we prepare with respect for the ingredients and passion for the profession. At Bistro TWO the majority of what we serve, comes from the region we call home. Sustainable products from local producers every season. Accompanied by a selection from our diverse wine collection, a thirst-quenching glass of beer or one of the many house cocktails; we know that great food makes for a great mood!
Within the walls of the Bistro there is seating room for fifty guests, but there are more great little spots to get cozy in and let the time fly by. Can you see yourself sitting on the beautiful terrace on the Roerkade? Or perhaps you’d prefer to relax on the Rooftop, where you can see the bells of the churches in the old center of Roermond, or see the Roer winding towards the horizon.
Bethany DeLong and Edwin Soumang started their second restaurant adventure with Bistro TWO in their own city of Roermond. Their Michelin-starred Restaurant ONE is located less than five minutes from Bistro TWO on the Roerkade, in the historical ECI building. An existing collaboration between Restaurant ONE and Hotel DUX turned out to be favourable for making this new step.
The day-to-day at Bistro TWO is run by restaurant manager Brandon Emmanuel and chef Lambert Walter. Both were longtime employees at Restaurant ONE before seizing this opportunity with great enthusiasm and ambition.
Chef Lambert Walter previously worked at De Pastorale in Belgium, which holds two Michelin stars. He also cooked in the idyllic setting of the Maldives, alongside World’s best female chef Ana Roš: a JRE (Jeunes Restaurateurs d’Europe) collaboration. The menu reveals his love for the power of simplicity, a personal signature, and great casual food. Blowing away expectations, diners are left with the tales of an experience definitely worth repeating!
Restaurant manager Brandon Emmanuel is equally responsible for that great experience. He takes care of the day-to-day activities and leads his team , the makers of a feel-good evening. When you visit, ask him for the wine list that offers something for everyone, including oh-so-deliciously-drinkable Dutch wines and a selection of cocktails that you cannot miss. Above all, Brandon ensures that you have a delightful, carefree evening. It’s all about great food and great mood!
